Popular starters include soupe à la bière (beer soup) made with chicken stock and onions; poyjesvlees, a cold paté made of veal, pork and rabbit; flamiche, a savoury cheese pie with leeks or onions; tomate aux crevettes, tomato filled with shrimps and mayonnaise.

Popular main courses include waterzooi – a stew of either chicken or fish simmered in stock, cream and white wine and served with pureed vegetables; anguille au vert, eel flavoured with herbs; carbonnades flamandes, lean beef cooked in a casserole with onions and beer; boudin rouge and boudin blanc, types of blood sausage served with potato puree and an apple compote; hochepot, a stew based on oxtail or pigs’ trotters, ears and snout; lapin à la flamande, young rabbit served with prunes soaked in brandy or with beer and mustard.

Popular sweet foods include Gaufres – waffles served with syrup, chocolate or icing sugar; Speculoos – ginger biscuits served with coffee; Smoutebollen – sugared doughnuts.

A popular snack throughout Belgium is Frijtes (French fries), often served in a paper cone with a dollop of mayonnaise.
